My name is Allison Houtzager and I hold honesty and simplicity as two of the highest virtues (or, as my husband reminds me, I’m incredibly blunt.) I spent nearly three fruitful decades in the food industry in the UK, before hopping across the pond to the United States to build a name for myself in the nutritional industry. I’ve had my fair share of adventures, including a term as a pastry chef for the Royal Air Force, a transition into restaurant management, and a career as an award-winning Director of Nutritional Services. But these fields were all a piece of cake compared to my true passion, which I’ve decided to base the rest of my life around: crickets.
This is a new space that required me to venture into entrepreneurship, founding multiple cricket-based companies. After over a decade of servicing the reptile industry, I co-founded Paradox Protein, a company that supplies protein powder for humans made exclusively from crickets. I discovered that crickets have so much more to offer than mere protein— including vitamins B2 & B12, calcium, magnesium, fiber, prebiotics, and iron, among numerous others.
If eating crickets seems crazy, I invite you to look at the other mysterious chemical concoctions in pills that we are willing to put into our bodies. My years in the nutrition field focused on the impact and digestibility of many medications that people take while aging. These pills were synthetic, variably effective, and hard on stomachs. I believe in getting nutrients from nature - it’s more sustainable for the environment and easier on our bodies.

With a passion to help better the world, my dream is to one day take my products to countries that are in great need of protein and nutrition. My goal: to begin with crickets and to result in helping humanity.

Empowering individuals and motivating groups towards healthy lifestyle behavior modifications has been the passion of nationally recognized Registered and Licensed Dietitian Nutritionist Regina Saxton since 1998. Regina has practiced in a variety of settings including clinical, out-patient, corporate and community wellness, food service, governmental agencies and non-profit organizations.
Joining the Paradox Protein team to promote and incorporate the nutritious and sustainably-sourced benefits of crickets aligns perfectly with her areas of specialization including integrative and functional nutrition utilizing whole-food concepts with natural ingredients, healthy weight promotion, anti-aging strategies, inflammation reduction, food sensitivities and disordered eating recovery.
Regina also has a private practice providing counseling services on the management of specific diseases such as, digestive disorders, diabetes and metabolic syndrome, heart conditions, cancer, and renal disease where she is dedicated to suggesting safe and natural supplementation or laboratory testing recommendations as medically appropriate.
She offers an environment of compassion and empathy with supportive, yet firm nutritional advice. Her non-diet approach to fostering a healthy relationship with food aligns with her philosophy of living a life in balance physically, emotionally, mentally and spiritually which resonates throughout her consulting practice.
She graduated from The University of Florida Food Science and Human Nutrition Program and completed her dietetic internship at the prestigious Mayo Clinic in Jacksonville, FL. As an active member of the Academy of Nutrition and Dietetics, Regina is a leader in providing expert-level and research-based sound nutritional education and advice.
